Fruit Basket Ravishing Raspberry Summer Cake
Have you been plugged into Great British Bake Off’s return and ready to use a fruit basket to put your own cake making skills to the test? If the answer is yes and you want to channel your inner Mary Berry then look no further, we’ve put together this Ravishing Raspberry Summer Cake recipe, an easy-peasy piece of cake making for fruit lovers out there. It’s also full of goodness as well, so you needn’t feel that guilty about eating it.
On your marks, get set – BAKE!
Kicking off you’ll need:
- 500g Summer Fruit – Raspberries, Blackberries and Blueberries
- 4 tbsp Demerara Sugar
- Slice of Cinnamon and Raisin Loaf – a local bakery can provide!
- 25g Softened Butter
- Crème Fraîche or Fromage Frais, to serve (if needed!)
Making this fruity treat is simple and easy, if you want to change some ingredients for others in your fruit basket then feel free to. Just ensure you prepare them as needed!
Right, heat your over to 200C, or Gas Mark 7 and roll around three quarters of your berries into a medium baking dish, spin the rest of the berries in a food processor to make a purée and add to the dish; stirring it in with half of your sugar.
If needed, chop your loaf into slices, butter them and chop again in half triangles. Cover your dish with as much bread as needed and dust with the remainder of your sugar.
Cover your baking dish with foil and pop into your oven for ten minutes, uncover, and bake again for five more minutes – or until the fruit starts to bubble and the bread is toasty.
Serve with dollops of Crème Fraîche or Fromage Frais if desired, ice cream also works wonderfully with this recipe as well.
