Creating A Delicious Hearty Minestrone Soup
Don’t know if anyone else has noticed but we are in spring and it is beginning to feel much like summer has come early so it would be nice to make a hearty soup to match our moods which is why making a Springtime Crockpot Minestrone soup would be a great, healthy and delicious soup. This could be for lunch at work, for dinner or even as a great starter.
For this great recipe you will need the following:
- 1 onion finely chopped
- 3 crushed garlic cloves
- 3 carrots, wash and sliced
- 1 cup of garden peas
- 1 can of chopped tomatoes
- 2 cans of cannellini beans
- 3 cups of vegetable stock
- 3 cups of water
- 8 ounces of uncooked fresh pasta
- 1 bag of freshly picked spinach
- 1 handful of grated cheddar cheese
- Pinch of salt and pepper – add to taste
How to make:
Chop and add the finely diced onions, carrots, garlic with the whole can of chopped tomatoes, cannellini beans, vegetable stock and water to your Crockpot or large pan.
You’ll want to simmer for around 4 to 6 hours, stirring a couple times throughout.
About 10-15 minutes before serving, add in the spinach, peas and pasta. Continue to simmer for another 10-15 minutes then gradually add in the grated cheese.
Have a taste and see whether you need any salt and pepper as desired. Now for the best part, serve piping hot. Caution, contents maybe hot!
