Winter Time Chicken Stew
As the cold is drawing in, this is a perfect time to start slow cooking again especially if you are working the typical 9 till 5 day job. The mighty chicken stew is a perfect recipe for this time of year and is great with a wide range of vegetables.
To start this recipe, you will need the following:
- Roughly 1lb of chicken breast which has been washed
- 1 or 2 mushrooms
- 3 cups of water
- 1 large finely chopped onion
- 1 stick of celery
- 2 carrots finely sliced
- Salt and pepper – add to taste
- Thyme and sage
- 12 ounces of chicken broth
- 4 ounces of tomato paste
- 3 table spoons of cornstarch, mixed with water
- 2 handful of plain rice
- Any other small vegetables you prefer
How to Put Together
Place each ingredient apart from the cornstarch into a slow cooker for four hours using the carrots as a good indication when the corn starch is needed. If you are at work, feel free to place on the lowest setting for best results.
If you added cornstarch, place back on a high setting for a further 30 – 40 minutes.
I always serve this stew with rice to help soak up all the remaining flavours and with a small portion of potatoes.
